Filling Curry Salad

Ingredients:

  • 12 oz. can of chicken
  • 2 c. brown rice, cooked and cooled
  • ½ c. raisins
  • 1½ c. napa cabbage, chopped
  • 2 c. red apples, chopped
  • Romaine lettuce or spinach, for serving

Dressing:

  • 2 tsp. curry
  • ¼ tsp. sea salt
  • 2/3 c. light mayonaise
  • ¼ c. coconut milk

Directions

  • Combine the first five ingredients in a bowl.
  • In a separate bowl, mix the dressing ingredients.
  • Combine the dressing and the salad until well mixed.
  • Serve on romaine lettuce or spinach.
