Mammal-Free Mac and Cheese


  • 3 garlic cloves, chopped
  • Olive oil
  • 2 small sweet potatoes
  • Vegetable radiatore
  • ¾ c. canned butternut squash
  • ¼ c. vegan butter
  • ½ c. almond or soy milk
  • 1/3 c. nutritional yeast, plus more for topping
  • Sea salt
  • Cayenne pepper
  • Black pepper


  • Preheat the oven to 350 degrees. Begin by heating olive oil in a sauté pan. Add the chopped garlic and cook on low heat. Poke holes in the sweet potatoes and cook them in the microwave for 6 minutes. Meanwhile, boil the vegetable radiatore until tender. To a blender, add the cooked sweet potatoes, butternut squash, vegan butter, milk, nutritional yeast, and spices. Add the cooked garlic and oil as well. Blend until smooth. Mix the sweet potato “cheese” mixture with the pasta. Transfer to a baking dish and top with additional nutritional yeast. Bake for 20 minutes.
